Kaiseki Ryori


  Kaiseki Ryouri is artistic and gracious Japanese seasonal cuisine.

  Kaiseki ryouri originated as a light meal eaten before a tea ceremony, because the tea would taste better if the people weren't starved. Now, however, it refers to a course of Japanese cuisine served at a high-class restaurant. The kaiseki menu and tableware are varied according to this seasonal spirit. Thus when you order a course meal, you are sure to get the best seasonal food available in Japan.

  Each dish is made from carefully selected seasonal ingredients and is served in beautiful plates.

  Order of kaiseki meal:
  1. Rice, Miso Soup and Mukousukel--mainly sashimi
  2. Nimonowan--boiled food
  3. Yakimono--broiled fish
  4. Shiizakana--appetizers eaten with sake
  5. Hashiarai--soup
  6. Hassun--morsels from the mountains and the sea
  7. Koumono--Pickles

  Kaiseki equipment are also important. They have to be selected with reference to the season and harmony of material (earthen ware and lacquer ware), color, and figure.
