Sake brewing in Kanazawa


  Japanese sake is brewed beverage in common with wine and beer. Japanese-style sake brewing has uniquely developed based on the technique introduced from China. In Edo period, sake was brewed on a large scale with sophisticated technique same as at present.

  Fine water and rice are indispensable for sake brewing. Kanazawa and its environs we live in is one of the most famous area which boasts of abundant sake production due to good-quality water from Mt.Hakusan.

  Sake brewing makers in Kanazawa have been in business from Edo period. Their houses have maintained some remnants of prosperous merchant houses of Edo.

  Sake is involved in the Shinto religion and purifying water which is indispensable for shrine rituals. Altough it is partly mechanized, main parts of the storehouse are decorated with plaited rope of Shinto. So I can see the spirit of sake craftmen who has been making sake with appreciation for blessings bestowed by nature.
