Japanese Cultural Topic No.8 Soy Sause Town "Ono" |

| I visited "Moromi-Gura" on "Ono" port town located on northwest Kanazawa city. The smell of soy sauce coming from somewhere invaded my nostrils because "Ono" port has been flourished in soy sauce brewing for 400 years. Actually I found many old breweries of soy sauce there.(Photo No.1)
The reason why soy sauce brewing was flourished is blessed with ingredients. It has an abundance of pure water and is convenient to obtain oats, soybeans, and salt produced in Noto peninsula because it was the calling port of merchant ships called "Kitamae-Bune" in Japanese. Another reason is that upper ranges of society in Kanazawa had promoted new style cuisine to satisfy the demands of their relish. In the process, soy sauce has developed synergistically.
"Moromi-Gura" renovated soy sauce store room has a gallery space and cafe. The tables and chairs used to be barrels and tubs for soy sauce brewing. The most popular food in this cafe is soy sauce soft ice cream. Frankly it sounds strange to me. But it was tasty like candy. And various bottles of soy sauce are sold.(Photo No.2, No.3, and No.4)
In closing, bits of knowledge of soy sauce. Soy sauce is indispensable in Sushi loved by people the world over. Smart Japanese call soy sauce by a different name "Murasaki" which means purple. Let's try this at your favorite Sushi-Bar next time!
